Roasted Veg, not just for the winter!
This is a roasted veg salad ... I roasted yams, raw beets, turnips, and parsnips. I may have thrown a potato in there too. Covered them in olive oil and a few seasonings (salt, pepper and oregano) and baked them.
After it was cooked, I places the veg over a bed of baby spinach, added some grilled chicken and parmesan cheese, threw a little olive oil and vinegar over it and went to town!
Very tasty!
